Celebrate St. Patrick’s Day: Mint Chocolate Cake

We are continuing our celebration of St. Patty’s day with this delicious Mint Chocolate Cake. Our friend, Bonnie made this ever so sinfully delicious cake last year.   She said it’s her husband’s childhood favorite and we can certainly can see taste why.Image found here.

Cake Ingredients:
4 eggs
1 1/2 cups of Hersheys Syrup
1 cup flour
1 cup sugar
1 stick of butter softened

Preheat oven to 375.  Blend ingredients together until smooth and pour
into a greased 9 x13 in. pan.  Bake for 24-27 minutes or until top
springs back when touched.  (I usually just check to make sure that
the edges look done.)

Mint Layer Ingredients:
1 stick of butter softened
1/2 tsp. of mint extract
3 drops of green food coloring
2 cups of confectioner’s sugar
1 tablespoon water

Combine ingredients and spread over completely cooled cake.  Then
chill in refrigerator for 15-20 min.

Chocolate Topping:
1 1/2 cups semisweet chocolate chips
6 tablespoons butter

Melt ingredients on low heat and stir until smooth.  Spread over
chilled mint layer.  Refrigerate until set.
