Cheers! Roasted Strawberry Coconut Milk Ice Cream

Sprouted Kitchen, by Sara Forte, is a fabulous blog to follow simply because it brings two of my favorite things together: beautiful photos and delicious food. Sara’s husband, Hugh Forte, is an amazing photographer. They are currently working on a cookbook that is due this fall.

Today, I thought it would be great to share this gorgeous recipe: Roasted Strawberry Coconut Milk Ice Cream.

ROASTED STRAWBERRY COCONUT MILK ICE CREAM // Makes about 1 quart

Adapted from Hungry Girl Por Vida

Few notes. First off, be sure to use full fat coconut milk, the light stuff will turn out too icey. I halved most of my strawberries, but after a few spoonfuls of the ice cream, I wish I had either quartered them, or mashed them up a bit with a fork before I added them to the machine. The chunks were a bit large and disrupted my pure ice cream enjoyment with big frozen cubes of fruit. If you end up with more strawberries than you use in the ice cream, they are delicious on a piece of toasted bread over a hearty swipe of fresh goat’s cheese. In fact, that combination is maybe a reason to make more than you’ll need anyway.

2 pints strawberries, hulled and quartered

2 tsp. natural cane sugar

2 egg yolks

1/3 cup natural cane sugar

3 Tbsp. maple sugar (or just more natural cane sugar if that’s what you have)

1 13.5 oz. can coconut milk

1/4 tsp. vanilla extract

2 oz. dark chocolate, optional

Preheat the oven to 300′.

Line a rimmed baking sheet with parchment. Pile the berries in the middle, sprinkle with the 2 tsp. of cane sugar, pinch of sea salt and toss gently to coat. Spread in an even layer and bake on the middle rack for 25 minutes. Turn off the heat but leave the berries in there to cool slowly. They need to be completely cool before adding to the ice cream machine. This step can be done in advance.

Set a glass bowl over a pot of simmering water, but do not let the bowl touch the water. Add the egg yolks and both sugars and stir to warm. As the sugar melts, it will become smooth and shiny. If these two need a bit of help melting, just add a spoonful of the coconut milk to get things moving along. Stir the mixture for about 5 minutes. Add the can of coconut milk and whisk everything to combine. As everything warms, it will get smoother. The custard will start to thicken just a bit. Stir in the vanilla, turn off the heat, strain through a fine strainer to remove any eggs bits and transfer the bowl to the fridge to cool completely.

Add the coconut custard to your ice cream maker and churn according to instructions. Meanwhile, if using, melt the chocolate in a double boiler (glass bowl over simmering water). At about 75% finished, add in a cup of the cooled, roasted strawberries and let it continue. In the last minute, slowly drizzle in the (not super hot) chocolate if you wants some chocolate chards or chunks in the ice cream.

Transfer to a container and freeze until firm.

Sneak Peek: 417 Bride

Once again, Social Graces had the privilege of styling for 417 Bride that will hit stands this winter.   Back in May, we styled a two day shoot at Silver Dollar City that you can find here.  This time we pulled together and styled three different shoots; honeymoon getaway dresses, 4 weddings and a cupcake spread.  Below are some shots from the photoshoots through my phone.

Real Wedding: Blake and Mindy

Back in June, I had the opportunity of coordinating a wedding at the beautiful Hickory Hills Country Club. I had no idea the treasure that was hidden at this place. The day went smooth, the only worry was the 30% chance of rain that was lingering over us. However, once we committed to keep everything outside, the rain cleared and the day was gorgeous. The bride was nice and relaxed, the groomsmen were funny and helpful and the photographer, Kim McKinney made things extra easy. What a fun day for a very fun couple.

Real Wedding: Claire & Zach

Claire & Zach of St. Louis  were such a sweet couple to work with. Their day was calm and joyous, just like the two of them. We hop you enjoyed a bit of inspriation from the details (and photography locations!) that Claire came up with.

Jerrica’s Wedding Shower

Jerrica’s wedding shower was so fun to plan. We concentrated on textures: glass, wood, burlap, yarn and tissue to create a festive look. The hanging yarn balls were so easy to make (I’m sure we’ll post a DIY of that in the near future). We chose not to overpower the look of the host house, but to add bits and pieces of fun & light party decor. Sometimes, a little can go a long way. Enjoy!

Birthday: Zeda’s Second

Zeda turned two and we celebrated with her favorite book. For a year now, she has been especially fond of her Itsy Bitsy Spider book. Since she is still too young to have much of an opinion about her party theme we grabbed onto something she loved. The day was perfect. It was raining all morning until 30 minutes before the party. Then, the sun came out and we fired up the grill. We cooked out, had a bunch of sweets, read Itsy Bitsy Spider, swam in the kidy pools and of course opened presents.  I can’t wait until her next birthday!

The First Look

Although more and more couples are choosing to see each other before the ceremony, there is still a great debate over the “First Look.” If that term leaves you clueless, I’ll fill you in. A “first look” is a moment (usually private) between the bride and the groom before the ceremony begins. As a photographer and a once-upon-a-time bride myself, I usually suggest having this first look a few hours beforehand. Not only is the first look just plain fun for me as a photographer, it also offers practicality to the day – you can get all your pictures done and then go enjoy your wedding!

However, this practical argument is not what usually wins a bride over to the idea. The meaningfulness that happens in those few moments are second to none. It’s private, it’s intimate, it’s just about the two of you. At many weddings, this is the only private moment the couple will get to share. For most, seeing each other in this fashion calms nerves and brings the couple’s focus to what the day is really about – a lifelong commitment to each other.

Maternity and Newborn Session

Today we are featuring a sweet maternity and newborn session to end our salute to moms. Have a wonderful Mothers’ Day Weekend!

Meet Bailey, husband Matt and sweet baby Mason. They are celebrating their first Mothers’ Day this weekend. From Bailey: I have wanted to be a Mom for as long as I can remember. When anyone asked me what I wanted to be when I grew up, that’s what I would say- a mom. Now that Mason is here, I could not be more in love. Celebrating this first Mothers Day with my sweet, little family is going to be a very special day!
